Chef Mark Peel:
Amuse: Grilled eggplant on grissini, chopped liver on grissni.
Antipasto: braised baby artichokes, roasted asparagus, crispy squash blossoms.
Main Course: Rabbit Bolognese with currants and black cabbage, fresh torn pasta and shaved parmesan. Roasted rabbit legs and saddle with plums and braised butter lettuce.

Fish Course: White Copper River salmon baked in clay with fennel and sweet and sour figs.
